Weigh Day

I am loving this whole Diet Bet thing.  Having this little ticker to show my progress is really motivating:
And I also love that 4% of your body weight isn't an impossible feat.  Small wins lead to huge victories, am I right?!?!!
 
My weigh-in this morning was a flat 214.  A loss of 2.4lbs this week.  Woot woot!!

Friday Weigh-In

I really wish I had sucked it up and posted my weight at the beginning of the week.  I HATE logging gains.  Last Saturday morning, my Spring Break gain was like 1.4lbs.  But then, my body went crazy and I gained like 3-4 more lbs by Tuesday morning- I was horrified and didn't even take proper note of the number for myself.  I am blaming water retention and constipation.
 
Today, I weighed in at 216.4.  Officially up 2lbs from my weigh-in two weeks ago.  And down .4lbs from my official Dietbet weigh-in yesterday.  Do you read Skinnymeg?  I love her!  She is hosting her first Dietbet here.  It officially started yesterday, but you still have some time to sign up if you would like to join.

Back to the Grind

Spring Break is over.  Sigh....
 
I didn't go completely buck wild (a little buck wild) over the break, but I didn't track everything either.  I did zero working out.
 
I didn't post the Friday before SB because I just didn't have time, but I weighed in at 214.4.  I know that I gained a tiny bit back, but I am going to officially weigh in again this Friday.

My eating plan for now is just going to be counting calories.  The hubs is in town, so I will be cooking for my little family and we have a pantry full of food that needs to be eaten.

Low-Carb Buffalo Chicken

I love me some wings- actually "boneless" wings because eating off of the bone is far too messy.  I have been craving wings, so I decided I needed to come up with a homemade alternative.  I was so happy with how they turned out, that I thought I should share the wealth.

 
 
4 Chicken Tenders, cut into thirds.
1 TBSP Butter
1 TSP Ranch Dressing Mix
Buffalo Sauce
 
Melt the butter on medium heat.  Add in ranch seasoning and mix well.  Add chicken tender pieces and stir to coat well in butter mixture.  Brown on each side until chicken is fully cooked.  While chicken is cooking, heat desired amount of Buffalo sauce for a few seconds in the microwave.  Put cooked chicken in a bowl.  Add Buffalo sauce and toss to coat.  Serve with Blue Cheese or Ranch dressing for dipping.
 
Note: I was cooking for one.  You may want to double this if you are cooking more.  Also, be sure to check carb content of Buffalo sauce and your dipping sauce of choice.
